As above.
Have a "Ride" magazine tour of Spain all planned out for next year.
The biggest problem I am having is trying to find a hotel chain similar to Premier Inn or Travelodge in Spain. I just need some where basic to lay my head at the end of the day.

As your travelling in style, why not stay in style?

The Parador chain of Spanish government owned hotels was one that I had looked into.
Very nice option but hoping to save a bit of cash by going a little bit cheaper.
Something like the F1 chain in France

Paradors can be a bit expensive but are generally good value for the excellent venues. There are also some really great small independent hotels in Spain where you will have a far better 'Local' experience than using one of the bland chain hotels. They may take a bit more seeking out and they may struggle with English but it will be well worth it. I have stayed in some very clean, comfortable family owned hotels in northern Spain that are often a bit quirky but will serve you traditional local food with a smile and not rip you off.

Booking.com is your friend
Out of 14 different hotels we used on our Europe tour in June, we would use every one again!

We have just returned from two weeks in Spain staying at Paradors booked via Brittany Ferries, the deal was very, very good value, the basic package was seven nights in the hotels half board ( food superb ) including ferries from Plymouth to Santander....the price was just over £930 before we added extra nights. Well recommended .

Yep Booking.com every time. We use the Map function to zoom in. Filter the cost and check with Trip Advisor for review. Use the free cancellation option in case of weather problems or tour changes. Enjoy.
