Let me understand this correctly that in the worse case scenario and the bike was stolen and assumining the documents are on the bike. Do you carry back up information on your phone? As all evidence of proof of the bikes existence is in the UK.
It's crazy that we have to think of this type of situation, but there are some really bad people out there. When I travelled to my property in France in October I pulled into one of the service stops and spotted a VW camper full of " pikey" type lads who all whatched me me pulling in and fuel up and never took their eyes of me until padlock chain and disc lock came out. I was there for a pee and afterwards sat observing and they were definitely upto no good.

The copied documents left at home are accessible on the strength of a phone call.

Keep the original documents ( a legal requirement in France ) tucked safely away in you jacket. Having been stopped in a couple of French Police `Road Safety Checks', I also carry photo copies, clearly marked up as being `Le Copie', which I have given them, they seemed to appreciate this as once compared to the original saves them writing all the details out, and you can get on your way.
I also carry, or my pillion passenger does, a `Spare set Keys' for the Bike, heard some horror stories of lost keys abroad....

I take originals but email myself copies of all documents so that I can always get copies if needs be

I always take my spare set of keys and mark my diary 1 week prior to departure to start searching for them.
