Lambda/O2 Sensors

Wanting to understand how Lambda/O2 sensors work and how the air/fuel ratio is monitored, did some research and came up with a couple of videos.

The voltage output between 0.1V (lean) & 0.9V (rich) is relative to the air/fuel ratio.

Skipping to 18:48, shows the O2 sensor voltages on an R1200RT.
I now understand how monitoring these voltages indicates the fuelling on the bike without exhaust gas analysis.
Apparently, folks who for example re-map ECU's use this information to trim the fuel mapping they may install on the bike.
Have I understood and explained this correctly or is it just b*ll*cks.
